Ingredients

6 large eggs

1 ripe avocado

2 tablespoons Greek yogurt

1 teaspoon Dijon mustard

1 teaspoon lime juice

1/4 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon fresh chives, finely chopped

1/4 teaspoon smoked paprika (for garnish)

Instructions

Boil the Eggs: In a saucepan, place the eggs and cover them with cold water. Bring it to a boil over high heat. Once boiling, cover the pot, turn off the heat, and let the eggs sit for 12-15 minutes.

Cool and Peel: After the time is up, transfer the eggs to an ice bath to cool for about 5 minutes. Once cooled, gently crack the shells and peel the eggs under running water for easier removal.

Prepare Filling: Slice the peeled eggs in half lengthwise and scoop out the yolks into a mixing bowl. Add the ripe avocado, Greek yogurt, Dijon mustard, lime juice, garlic powder, salt, and pepper to the bowl.

Mash and Mix: Use a fork to mash the avocado and yolks together until smooth and creamy. Adjust seasoning if necessary by adding more salt or pepper to taste.

Fill the Eggs: Spoon or use a piping bag to fill each egg white half with the avocado yolk mixture.

Garnish: Sprinkle the filled eggs with smoked paprika and a sprinkle of chopped chives for a fresh touch.

Serve: Arrange the avocado deviled eggs on a serving platter.
