250g pasta (preferably penne or fusilli)

200g feta cheese, block

1 cup cherry tomatoes, halved

1/2 cup olives (Kalamata or green), pitted and sliced

3 cloves garlic, minced

1/4 cup olive oil

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried oregano

Fresh basil leaves, for garnish

Salt and pepper to taste

Freshly grated Parmesan cheese (optional, for serving)

Instructions
 

Preheat your oven to 200°C (400°F).

    In a baking dish, combine the cherry tomatoes, olives, minced garlic, olive oil, red pepper flakes, oregano, salt, and pepper. Toss the mixture gently to combine.

      Place the block of feta cheese in the center of the baking dish among the tomatoes and olives. Drizzle the top of the feta with a little extra olive oil and season with a pinch of salt and pepper.

        Bake in the preheated oven for about 25-30 minutes, or until the feta is soft and slightly golden, and the tomatoes have burst open.

          While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain and set aside, saving a little pasta water.

            Once the feta is done, remove the baking dish from the oven. Use a fork to gently crumble the feta into the tomato mixture, combining it well to create a creamy sauce.

              Add the cooked pasta to the baking dish and mix everything together, adding a splash of reserved pasta water if needed to loosen the sauce.

                Serve immediately, garnished with fresh basil leaves and a sprinkle of freshly grated Parmesan, if desired.
