1 cup all-purpose flour

1/2 cup whole wheat flour

1/4 cup sesame seeds

1/4 cup poppy seeds

1/4 cup sunflower seeds

1 teaspoon baking powder

1 teaspoon salt

1/4 cup olive oil

1/2 cup water (room temperature)

Optional: Coarse sea salt for sprinkling

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the all-purpose flour, whole wheat flour, sesame seeds, poppy seeds, sunflower seeds, baking powder, and salt. Whisk them together until evenly mixed.

      Add the olive oil to the dry ingredients and mix until crumbly.

        Gradually pour in the water while stirring until the dough starts to come together. You may need to adjust the water slightly, depending on the humidity of your environment.

          On a lightly floured surface, knead the dough for about 1-2 minutes until smooth.

            Divide the dough into two equal parts and roll each half out to about 1/8-inch thickness. The thinner the dough, the crispier the crackers will be.

              Transfer each rolled-out dough onto the prepared baking sheet. Use a sharp knife or pizza cutter to cut the dough into squares or rectangles. You can also use cookie cutters for fun shapes!

                If desired, sprinkle coarse sea salt over the top of the dough before placing it in the oven.

                  Bake in the preheated oven for 15-18 minutes or until the crackers are golden and crisp, keeping an eye on them to prevent burning.

                    Once baked, remove from the oven and let cool on a wire rack. Break apart the crackers along the cuts made before baking.
