Ingredients

3 large apples (Granny Smith or Honeycrisp), peeled, cored, and sliced

2 stalks of rhubarb, chopped into 1-inch pieces

1/2 cup granulated sugar (adjust based on the tartness of the rhubarb)

1 teaspoon cinnamon

1 tablespoon lemon juice

1 cup all-purpose flour

1/2 cup old-fashioned rolled oats

1/2 cup brown sugar

1/2 cup unsalted butter, melted

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the sliced apples and chopped rhubarb. Stir in the granulated sugar, cinnamon, and lemon juice. Toss until the fruit is evenly coated. Transfer the fruit mixture to a greased 9-inch pie dish or an equivalent baking dish.

Make the Crumble Topping: In another bowl, mix the flour, rolled oats, brown sugar, melted butter, and a pinch of salt. Use your fingers to rub the mixture together until it resembles coarse crumbs.

Assemble the Crumble: Evenly distribute the crumble topping over the fruit filling in the baking dish, ensuring the fruit is well covered.

Bake: Place in the preheated oven and bake for about 35-40 minutes, or until the topping is golden brown and the fruit is bubbling.

Cool and Serve: Remove from the oven and allow to cool slightly before serving. Serve warm, optionally with a scoop of vanilla ice cream or whipped cream.
