2 cups coconut milk

1 cup shredded unsweetened coconut

¾ cup sugar (or sweetener of choice)

1 teaspoon vanilla extract

½ teaspoon salt

½ cup coconut water (for extra tropical flavor)

In a medium saucepan, combine the coconut milk, shredded coconut, sugar, vanilla extract, and salt.

    Heat the mixture over medium heat, stirring occasionally until the sugar has completely dissolved. Do not bring it to a boil.

      Remove the saucepan from heat and stir in the coconut water. Let the mixture cool to room temperature.

        Once cooled, pour the mixture into a blender and blend on high for about 1-2 minutes until it's smooth.

          Transfer the blended mixture to an airtight container and place it in the freezer.

            Every 30 minutes, stir the sorbet with a fork for the first 2-3 hours to break up any ice crystals. This will ensure a smooth texture.
