3 medium zucchinis, thinly sliced

1 cup low-fat ricotta cheese

1 cup grated mozzarella cheese (light)

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 teaspoon dried thyme

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

1/4 cup breadcrumbs (whole wheat for a healthier option)

Fresh basil leaves for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

      Add the sliced zucchinis to the skillet and cook for about 5-7 minutes, stirring occasionally, until they start to soften. Remove from heat and let it cool slightly.

        In a mixing bowl, combine the ricotta cheese, half of the grated mozzarella, Parmesan cheese, thyme, salt, and black pepper. Mix until well combined.

          In a rectangular baking dish, layer half of the sautéed zucchinis evenly across the bottom. Spread half of the cheese mixture on top of the zucchinis. Repeat with the remaining zucchinis and cheese mixture.

            Sprinkle the remaining mozzarella cheese and breadcrumbs evenly on top of the last layer.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.

                Remove from the oven and let it sit for about 5 minutes before slicing.
