2 slices of sourdough bread

1 tablespoon truffle oil

1 cup shredded Gruyère cheese

1 cup shavings of fresh black truffle (or 1 teaspoon truffle salt if fresh truffle is unavailable)

2 tablespoons unsalted butter

Freshly cracked black pepper to taste

Optional: microgreens for garnish

Prep the Bread: Lay the slices of sourdough bread on a clean surface. Brush one side of each slice generously with truffle oil, ensuring complete coverage for a rich flavor.

    Layer the Cheese: On the non-oiled side of one slice of bread, layer half of the Gruyère cheese evenly. Scatter the black truffle shavings over the cheese, then sprinkle a pinch of freshly cracked black pepper to enhance the flavor.

      Build the Sandwich: Add the remaining Gruyère cheese on top of the truffles, then cap with the second slice of bread, oiled side facing outward.

        Preheat the Pan: In a skillet over medium heat, melt 1 tablespoon of butter until bubbly but not browned.

          Grill the Sandwich: Carefully place the assembled sandwich in the skillet. Grill for about 3-4 minutes or until the bread is golden brown and crispy.

            Flip and Finish: Using a spatula, gently flip the sandwich to the other side. Add the remaining tablespoon of butter to the skillet if needed. Cook for an additional 3-4 minutes until the second side is also golden brown and the cheese is melted and gooey.

              Slice and Serve: Remove the sandwich from the skillet and let it sit for a minute. Slice it in half diagonally for presentation. Garnish with microgreens if desired.
