1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

Vegetable oil for frying

4 brioche buns

½ cup honey

2 tablespoons hot sauce (like Frank's RedHot)

1 cup shredded lettuce

½ cup sliced pickles

Marinate the Chicken: In a bowl, combine the buttermilk with a pinch of salt, pepper, garlic powder, onion powder, and smoked paprika. Add the chicken thighs and coat well. Cover and refrigerate for at least 1 hour, or overnight for best results.

    Prepare the Flour Mixture: In a shallow dish, whisk together the flour, cayenne pepper, and a pinch of salt and pepper.

      Heat the Oil: In a deep skillet or frying pan, heat about 1 inch of vegetable oil over medium-high heat until it reaches 350°F (175°C).

        Coat the Chicken: Remove the marinated chicken from the buttermilk, allowing any excess to drip off. Dredge each piece in the seasoned flour mixture, ensuring they are fully coated.

          Fry the Chicken: Carefully place the coated chicken in the hot oil. Fry for 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should be 165°F or 74°C). Remove and place on a paper towel-lined plate to drain excess oil.
