2 cups frozen corn, thawed

1 cup sour cream

1 cup cream cheese, softened

1/2 cup mayonnaise

1 cup cotija cheese, crumbled

1/4 cup fresh cilantro, chopped

1 jalapeño, finely diced (seeds removed for less heat)

1 teaspoon chili powder

1 teaspoon garlic powder

Juice of 1 lime

Salt and pepper to taste

Tortilla chips for serving

Instructions
 

In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise. Mix well until smooth and creamy.

    Add the thawed corn to the mixture, followed by the diced jalapeño, crumbled cotija cheese, and chopped cilantro.

      Sprinkle in the chili powder, garlic powder, lime juice, and salt and pepper. Stir everything together until fully combined.

        Taste and adjust seasoning if necessary. If you like it spicier, feel free to add more jalapeño or a dash of hot sauce.

          Transfer the dip to a serving dish and smooth the top with a spatula. Optionally, sprinkle some extra cotija cheese and cilantro on top for garnish.

            Chill the dip in the refrigerator for at least 30 minutes before serving to blend the flavors.

              Serve with tortilla chips for dipping, or use as a topping for tacos or burritos!
