1 cup fresh spinach, chopped

1 cup goat cheese, crumbled

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

3/4 cup milk

1/4 cup olive oil

2 large eggs

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease them with cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the flour, baking powder, baking soda, salt, black pepper, and garlic powder. Whisk until well combined.

      Prepare Wet Ingredients: In another bowl, whisk together the milk, olive oil, and eggs until smooth.

        Combine Ingredients: Slowly pour the wet ingredients into the dry ingredients, mixing gently until just combined. Do not overmix.

          Add Spinach and Cheese: Fold in the chopped spinach and crumbled goat cheese until evenly distributed throughout the batter.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the top of each muffin with grated Parmesan cheese.

              Bake: Place in the oven and bake for 18-20 minutes, or until the muffins are golden brown and a toothpick inserted in the center comes out clean.

                Cool: Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
