1 medium butternut squash, peeled and cubed

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 cup vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

½ teaspoon nutmeg

½ teaspoon cinnamon

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh sage leaves (for garnish)

Prepare the Butternut Squash: In a large pot, bring salted water to a boil. Add the cubed butternut squash and cook for about 10-15 minutes until tender. Drain and set aside.

    Cook the Pasta: In the same pot, add the pasta to the boiling water and cook according to package instructions until al dente. Reserve about ½ cup of pasta water, then drain the pasta.

      Sauté Vegetables: In a large skillet over medium heat, add olive oil and sauté the diced onion for about 5 minutes until translucent. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Add the cooked butternut squash to the skillet with the onions and garlic. Pour in the vegetable broth and bring to a gentle simmer. Once heated through, use an immersion blender (or a regular blender) to puree the mixture until smooth, creating a creamy sauce.

          Combine Ingredients: Stir in the heavy cream (or coconut cream), nutmeg, cinnamon, and season with salt and pepper. Let the sauce simmer for another 2-3 minutes until warmed through. Add the cooked pasta to the sauce, tossing until well coated. If the sauce is too thick, add some reserved pasta water until desired consistency is reached.
