6 large eggs

1 cup heavy cream

1 cup grated cheese (Gruyère or a mix of your choice)

1 medium zucchini, grated

1 bell pepper (red or yellow), diced

1 cup fresh spinach, chopped

½ cup diced onions

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper to taste

Olive oil for sautéing

Fresh herbs (parsley or chives) for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the diced onions and sauté until they turn translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

      Stir in the grated zucchini and diced bell pepper, continuing to sauté for another 4-5 minutes until softened. Finally, add the chopped spinach and cook until wilted. Season the mixture with salt, pepper, and dried thyme. Remove from heat and let cool slightly.

        In a large bowl, whisk together the eggs and heavy cream until well combined. Stir in the cheese and the sautéed vegetable mixture until evenly distributed.

          Grease a round baking dish or pie pan with olive oil and pour the egg and vegetable mixture into it, spreading it evenly.

            Bake in the preheated oven for about 30-35 minutes, or until the quiche is set and lightly golden on top. A toothpick inserted in the center should come out clean.

              Once baked, remove from the oven and let cool for about 5-10 minutes before slicing.

                Garnish with freshly chopped herbs before serving.
