8 rice paper wrappers

200g cooked shrimp, peeled and deveined

1 cup vermicelli noodles, cooked

1 cup fresh basil leaves

1 cup fresh mint leaves

1 cup shredded carrots

1 cucumber, julienned

1 bell pepper (red or yellow), thinly sliced

½ cup peanut butter

2 tablespoons soy sauce

1 tablespoon honey

1 tablespoon lime juice

Water, for soaking rice paper

Instructions
 

Start by preparing the dipping sauce. In a bowl, combine the peanut butter, soy sauce, honey, and lime juice. Mix until smooth and set aside.

    Fill a shallow dish with warm water. One at a time, dip each rice paper wrapper into the water for about 15-20 seconds, or until it becomes soft and pliable. Carefully remove and lay it flat on a clean cutting board.

      To the bottom third of the wrapper, add a few shrimp, a small handful of vermicelli noodles, fresh basil leaves, mint leaves, a spoonful of shredded carrots, cucumber, and bell pepper slices.

        Fold the sides of the rice paper wrapper over the filling, then carefully roll it up from the bottom to the top, creating a snug cylinder. Repeat the process with the remaining wrappers and filling ingredients.

          Once you have rolled all the spring rolls, serve immediately with the prepared dipping sauce on the side.
