1 cup quinoa, rinsed

2 cups water or vegetable broth

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (any color), diced

1/4 red onion, finely chopped

1 cup fresh parsley, chopped

1/2 cup fresh mint, chopped

1/4 cup fresh basil, chopped

1/4 cup olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Optional: Feta cheese, crumbled (for garnish)

Instructions
 

In a medium saucepan, combine the rinsed quinoa and water (or vegetable broth). Bring to a boil over medium-high heat.

    Once boiling, reduce the heat to low, cover, and let it simmer for 15 minutes, or until all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork.

      While the quinoa is cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber and bell pepper, and finely chop the red onion.

        In a large mixing bowl, combine the cooked quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and basil.

          In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the quinoa salad and toss gently to combine.

            Taste and adjust seasoning, adding more salt, pepper, or lemon juice if desired.

              If using, sprinkle crumbled feta cheese on top before serving.

                Serve immediately, or allow it to chill in the refrigerator for 20-30 minutes to allow the flavors to meld.
