1 lb (450g) carrots, peeled and cut into sticks

3 tablespoons olive oil

2 tablespoons za’atar spice blend

1 teaspoon honey

1 clove garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the olive oil, za’atar, honey, minced garlic, salt, and pepper.

      Add the carrot sticks to the bowl and toss them in the za’atar mixture until they are evenly coated.

        Arrange the coated carrots in a single layer on a baking sheet lined with parchment paper.

          Roast the carrots in the preheated oven for about 25-30 minutes, turning them halfway through, until they are tender and caramelized at the edges.

            Remove the carrots from the oven and let them cool for a few minutes.

              Garnish with fresh chopped parsley before serving.

                Serve with lemon wedges on the side for an extra burst of flavor.
